Update vector search tutorial terminology to Couchbase 8.0 standards

Rename folder structure:

• fts/ -> search_based/
• gsi/ -> query_based/

Update terminology throughout notebooks:

• FTS -> Search Vector Index
• GSI -> Hyperscale & Composite Vector Indexes

Add documentation links to Choose the Right Vector Index guide. Update README.md with new folder structure and terminology.
