This PR replaces Cowboy with Bandit as the HTTP server dependency.

Changes

Replace cowboy and plug_cowboy dependencies with bandit
Update code to use Bandit instead of Plug.Cowboy
Update documentation
Apply code formatting across the codebase
Add compose.yaml containing redis for the tests
