test: migrate `git_(gc|shallow)` to snapbox

This PR is intentionally trivial to make sure I understand the contribution process :)

Migrating files:

- `tests/testsuite/git_gc.rs`
- `tests/testsuite/git_shallow.rs`

Tested with `SNAPSHOTS=overwrite cargo test`.
