I have created an MCP server that uses HTTP instead of STDIO. I need to test it with Inspector, but I'm not sure how to do that or if it's possible

It is possible! You just type the uri of your server - for example - http://localhost:5000/mcp into the inspector uri field, and it should work. The exact uri depends on how you configure your server, but you should be able to see that in your log / terminal output when running it.
