Temporarily revert "Update node-datachannel subdep for ARM64 support"

This reverts commit 53646df. Necessary as it seems node-datachannel prebuilds have some issues on Windows? Unclear why, but easy to revert to fix for now. Sorry ARM64 devs - you'll have to manually update in the meantime.
