redhat: configs: Enable UCSI_CCG support

Upstream Status: RHEL Only

Tested: Verify USB-A and USB-C are functional on Nvidia Orin board,
 and no regressions on other platforms.

The Cypress CCGx Type-C controller over I2C interface is used on NVIDIA Jetson platforms.
Enable the UCSI_CCG support and driver so USB-C will work on this platform.
