Upgrade/Deploy script: Backup as a zipped file

As a systems administrator I want to minimise the number of files on systems to improve performance, zipping the backups of deployed versions when updating/deploying IBEX on instruments would help with that scenario.

Acceptance Criteria

• The IBEX deploy script is updated to zip the files when doing the backups
• A script is written that will allow a quick restore of a previous backup should a deploy have an issue
• The dev wiki is updated with information to reflect this workflow

Notes

• This is in part based on ALL/BUILDS: Modify appropriate build scripts to use zipped archives #8662, but is a separate ticket to allow for the very different area of this change to that ticket
